Kifle, kiflice, rolnice.....

Nisam ja kriva sto volim testo. Krivi su moji geni. Bosanski, vojvodjanski...svi su zaljubljeni u brasno, kvasac, oklagije... A nisam kriva ni za visak centimetara oko struka. Krivo je kiselo testo. Jedino za sta preuzimam odgovornost je moje ubedjenje da je kuca koja mirise na sveze peceno pecivo, srecna kuca.
Prve kiflice koje sam napravila mogle su da posluze samo kao ubojito oruzje, i dugo je bilo tako, nikako nisam uspevala da pronadjem pravi recept. Onda se moja mama pojavila sa svojim sad vec cuvenim Brzim kiflama koje su se ubrzo odomacile i u kucama mojih drugarica. Zatim je moja divna komsinica Andja odvojila jedno popodne da me nauci da pravim njene kiflice koje mi je do tada doturala preko ograde u basti. Ostalo je istorija....
Evo sada oba ova recepta a vi sami odlucite koji cete da isprobate. Verujte, nije toliko tesko kao sto izgleda. I ne preuzimam odgovornost za bilo cije centimetre oko struka!

Mamine brze kifle


700 g brasna (tip 500)
1 svez kvasac
1kasicica soli
1 kasika secera
11 kasika ulja
1/2 l toplog mleka

U malo toplog mleka razmutiti kvasac sa malo secera i brasna i sacekati da nadodje.
Od svih sastojaka umesiti testo. Testo ne mora da se odmara i raste nego mogu odmah da se naprave manje jufkice, razvuku se u krug i podele na trouglice od kojih se obrazuju kiflice. Premazu se zumancetom, pospu susamom ili kimom.
Peci oko 20 minuta na 200 stepeni C.



Andjine kiflice


1 kg brasna (tip 500)
1/2 l mleka
1 svez kvasac
4 kasike secera
2 kasicice soli
250 ml ulja ( ja ne stavim ovoliko, nego otprilike 200ml)
1 jaje
susam

Opciono
1 margarin ( na svaku kiflicu se posto je premazete zumancetom i pospete susamom, stavi komad margarina koji ce se u toku pecenja istopiti. Jeste ovako mnogo ukusnije ali ja ne stavljam margarin na kiflice i sasvim su dobre i bez njega)

Razmutiti mleko i kvasac i sacekati da nadodje . Pomesati brasno, secer i so. Dodati mleko sa kvascem i ulje. Umesiti glatko testo i ostaviti da naraste. Podeliti testo na sest delova. Oklagijom svaki deo razviti u krug, podeliti krug na osam trouglica. Svaki trouglic razviti oklagijom i urolati kao kiflice. Premazati jajetom, posuti susamom i po zelji staviti komad margarina na svaku kiflicu.
Peci u rerni zagrejanoj na 220 stepeni C dok ne porumene.





Mom's quick crescent rolls 


700 g bread flour
3 tsp dry yeast
1 tsp salt
1 tbsp sugar
11 tbsp of vegetable oil
1/2 l warm milk

1 egg for egg wash
sesame seeds or  cumin seeds


Warm the milk and mix in the dry yeast, with pinch of sugar and flour. Wait until the yeast start working, till the bubbles are formed.
Put together all ingredients and make a dough. Knead it until it is no more sticky. You can add little of flour if necessary. The dough doesn't have to rest. You can divide it into 6 small portions. 
At this point you can start preheating the oven to 400 F. 
Roll out each portion into a circle and cut 8 triangles. Roll them into crescent rolls and put on the baking sheet lined with baking paper. Give each roll an egg wash with a brush and then sprinkle with sesame or cumin seeds. Bake for 20 minutes or until golden. 

Crescent rolls

1 kg bread flour
1/2 l milk
3 tsp dry yeast
4 tbsp sugar
2 tsp salt
200 ml vegetable oil
1 egg for egg wash
sesame seeds

Warm the milk and mix in the dry yeast, with pinch of sugar and flour. Wait until the yeast start working, till the bubbles are formed.
Mix flour, salt and sugar. Add milk with yeast . Add oil. Knead it into a smooth dough. Cover the bowl with a tea towel and let it rest until it doubles in size.
Preheat the oven to 400 F.
Divide the dough into 6 portions. Put some flour on the kitchen surface and roll out one portion of the dought into a circle. Then cut the circle into 8 triangles. Roll each triangle into crescent roll starting from the bottom - wider part. Put rolls on the baking sheet covered with baking paper . Give each roll an egg wash and then sprinkle with sesame seeds. If you like, you can fill each roll with a teaspoon of jam, nutella, ricotta cheese... before rolling it into crescent roll.
Bake in the oven for about 20 min or less, until they are golden.
In the original recipe you are supposed to put a small piece of butter on each roll before baking but I don't do this and they come out just fine!
